It is employed as a polyol substrate for xylitol and sorbitol dehydrogenases and sorbitol dehydrogenase derived from xylose. It is applied as a sweetener and humectants and skin conditioning agent in cosmetics industry.

Solubility
Soluble in water (50 mg/ml), abs methanol (6 g/100ml), abs ethanol (1.2 g/100ml), alcohol (very slightly), and pyridine. Insoluble in ether.
Notes
Hygroscopic. Store away from oxidizing agents, water/moisture. Store under inert gas.
