Organisk syre bruges som standard til bestemmelse af phenoler i Folin-Ciocalteau-assayet3,4,5-Trihydroxybenzoesyre anvendes som et cyclooxygeasehæmmerstof, som findes i planter. I analytisk kemi bruges det som standard til at bestemme phenolindhold i forskellige analytter. Det fungerer som et udgangsmateriale til fremstilling af psykedelisk alkaloid meskalin. Yderligere bruges det til at fremstille polyestere baseret på phloretinsyre og gallussyre.
